The Origins of Ecuadorian Coffee

Ecuador's coffee history dates back to the 18th century when Jesuit priests introduced coffee plants to the region. The country's diverse climate and rich volcanic soil provide ideal conditions for growing high-quality coffee. Ecuadorian coffee is primarily grown in three regions:

  • Northern Highlands: Known for its high-altitude farms, Pichincha produces beans with bright acidity and floral notes.

  • Southern Highlands: This region is famous for its smooth and balanced coffee, often featuring chocolate and nutty flavors.

  • Coastal Area: Located near the coast, El Oro's coffee is characterized by its sweet and fruity profile.

Each region contributes to the unique flavor profiles that make Ecuadorian coffee stand out.

The Coffee Cultivation Process

The cultivation of Ecuadorian coffee is a labor-intensive process that emphasizes quality over quantity. Here’s a closer look at the steps involved:

1. Planting

Coffee plants thrive in shaded areas, which is why many farmers grow them alongside other crops. This practice not only protects the coffee plants but also promotes biodiversity.

2. Harvesting

Ecuadorian coffee is typically harvested by hand, ensuring that only the ripest cherries are picked. This meticulous process helps maintain the quality of the beans.

3. Processing

After harvesting, the coffee cherries undergo processing, which can be done through three methods:

  • Washed Process: This method involves removing the husks from the coffee cherries and washing them thoroughly before being set on drying tables.

  • Natural Process: In this method, the cherries are dried with the fruit intact, imparting a stronger flavor coming from the crops grown around the coffee.

  • Honey Process: Removes the husks but leaves some of the sticky fruit layer or what our farmers called "mucilago". Fermented with local honey for up 72 hours. Bringing a delicious sweet aftertaste.

4. Drying and Milling

Once processed, the beans are dried in the sun and then milled to remove the parchment layer. This step is crucial for preserving the beans' quality.

5. Roasting

Roasting is where the magic happens. Ecuadorian coffee beans are often roasted to medium or dark levels, enhancing their natural flavors. The roasting process can bring out notes of chocolate, caramel, and even citrus. Our coffee is roasted in an FDA approved facility.

Flavor Profiles of Ecuadorian Coffee

Ecuadorian coffee is celebrated for its diverse flavor profiles, which can vary significantly based on the region and processing method. Here are some common tasting notes you might encounter:

  • Fruity: Many Ecuadorian coffees exhibit bright fruity flavors, such as berries and citrus.

  • Nutty: Southern Highland coffees often have a nutty undertone, making them smooth and enjoyable.

  • Chocolatey: Darker roasts can reveal rich chocolate notes, perfect for those who prefer a bolder cup.

Understanding Coffee Grading

Ecuadorian coffee is graded based on its quality, with the highest grades being "Specialty Coffee." These beans are carefully selected and scored based on their flavor, aroma, and overall quality. Specialty Coffee is often sought after by connoisseurs and can command higher prices in the market.
